Description: A very fitting name for these speckled beans as they look like little red and white cows! Also called Trout beans or Appaloosa beans. They are full flavored, have a rich aroma and hold their shape well even after long cook times.

History: Allegedly these beans were a gift from Passamaquoddy Native Americans to Joseph Clark who was the first non-native child born in Lubec, Maine.
Don't forget the inoculant! Peas and Beans are among the crops that add nitrogen to your soil through an association with nitrogen-fixing bacteria. Inoculate the roots to make sure they are present in your soil! While peas and beans will still give you a crop without it, it has been shown that plants yield heavier and perform better when inoculated.
